     What's up with Joanna Wayne?

      Talking about food in books today on my blog at eharlequin.com. And here's the promised recipe for onion pie. Texas sweet onions work well for this but any sweet onion will do.


                     Onion Pie
1  1/2 cup of finely crushed Ritz crackers (or other brand of buttery cracker).
8 Tablespoons butter or margarine
1 large sweet onion, sliced

3/4  cup of whole milk (Do not use low-fat milk)
2 eggs
Freshly ground pepper to taste 
                                                             
3/4 teaspoon salt
3/4 cup grated cheddar 
Paprika

 

Thoroughly blend the cracker crumbs and four tablespoons of butter. (I do this in a zip-lock bag.) Press the mixture onto the bottom and sides of an eight-inch pie pan to form a crust. Saute the onion slices in the rest of the butter until tender (about ten minutes). Spread the sauteed onions evenly over the crust.  Blend the salt, milk, pepper, and eggs and pour over the onions.  Top with cheese and sprinkle with paprika. Bake at 350 degrees for 35 minutes.
Makes about 6 servings.
